With Cedreo you can create this specific roof using a gable roof plus two single slope roofs on each side.
To create a Gambrel roof, you have to :
- Create two single slope roof on each side and adjust its angle
- Create a main gable roof between them and adjust its angle and height
Create two single symmetrical slope roof
1 - To have a symmetrical two-sided roof, in the 'Layout' step, create two hidden walls in each side with the same dimension (here, 1').
❗Using the magnetism option between and the hidden wall, you are sure to draw the same roof in each side.

2 - In the 'Roof' step, create the first single slope roof by using the hidden wall magnetism.
3 - Select the exterior side of your roof and check 'Bottom slope' option in the right column (section 'Edge pararmeters')
4 - Adjust the base height and the angle/slope of the roof like you want (here, in the example: base height 4' and angle 65°)

5 - To create the other symmetrical roof, repeat all these steps in the other side
Create and adjust the main gable roof
1 - Create a gable roof on the middle of your level, between your two slope roofs
2 - Select your angle / slope (here : angle 17°)
3 - Adjust the base height of your gable roof to elevate it at the top of your single slope roof
💡 You can check in your 3D view window the elevation of your gable roof to adjust its height
